Triple Peppercorn Sauce
Ingredients
5g butter
1 onion, finely chopped
2 tsp triple peppercorn, slightly crushed
3 tbsp brandy
100ml red wine
200ml beef stock
4 tbsp double cream
Method
- Place butter in large, high-sided frying pan and fry onion and peppercorns on a medium heat for five minutes or until soft.
- Add brandy and cook until liquid has absorbed.
- Pour in wine, turn up the heat and boil rapidly until liquid is half reduced.
- Add stock and boil for 5 minutes, reducing liquid again.
- Stir the cream in and allow to thicken slightly.
- Season before serving.
Whiskey Mushroom Sauce
Ingredients
1 beef stock cube
1 tsp butter
1 onion, finely chopped
200g chestnut mushrooms, sliced
200g crème fraiche
1 tbsp Whiskey
Method
- Add the stock cube to 50ml boiling water.
- Fry the onions until soft, then add the mushrooms and cook for five minutes or until coloured.
- Pour in whiskey, then add stock and let liquid reduce slightly.
- Fold in crème fraiche and bring to a simmer.
- Season before serving.
